# Everyday healthy recipes with Benecol foods: Creamy Shallot and Parma Ham
Tagliatelle recipe
## Based on a hearty Italian classic, Dean Edwards explains how to create a
healthy alternative to Creamy Shallot and Parma Ham Tagliatelle whilst
incorporating Benecol® foods.

Based on a hearty Italian classic, this creamy shallot and Parma ham
tagliatelle is guaranteed to delight the senses - its smooth, velvety sauce
coating the folded ribbons to perfection. The original Italian version, though
delightful, would use butter, cream and lashings of Parmesan cheese - none of
which are recommended if you are concerned about your cholesterol levels.
But fear not! This new version has been cleverly reworked to use Benecol Olive
Spread and Benecol Cream Cheese Style Spread, both of which contain plant
stanols proven to lower cholesterol*. The saturated fat content of the recipe
clocks in at only 2g per portion.
'It's a great store-cupboard dish,' says Dean Edwards, one of a growing band
of modern cooks keen to create foods that are as healthy as they are
delicious.
The recipe is built around caramelised shallots and the moderate use of Parma
ham, which gives a rich bacony flavour. It's combined with a silky sauce made
from Benecol Cream Cheese Style Spread, freshened with peas. 'It's typical of
Italian cooking to use just a few ingredients really well,' says Dean. It's
easy to keep Benecol Spreads in the fridge for making a sauce like this.'
Choosing the right pasta is crucial. 'Fresh vacuum-packed pasta will save you
time, but it can sometimes have a slightly soggy texture. I prefer dried, if
I'm not making my own,' he says.
Shallots impart a sweet flavour, but they can be a nightmare to peel. Dean
recommends putting them into boiling water for 60 seconds, then leaving them
for a while until cool enough to handle.
'Hold back a few tablespoons of the cooking water to loosen up the mixture if
you want the pasta to be well coated and have a smooth texture.'
Dean has an extra tip. 'Not many people know that you can eat frozen peas raw
- just thaw them thoroughly first. Sometimes, they taste better than fresh
ones and it preserves their flavour and nutrients.'
Dean says that the benefits of Benecol foods should not be confined to older
people. 'A balanced diet is really important from an early age. We should all
aim for a diet which is lower in saturated fat, and the more ways you can do
it the better.
_**Creamy shallot and Parma ham tagliatelle - Serves 4**_
* 250g tagliatelle
* 110g peas
* 15g Benecol® Olive Spread
* 150g shallots, peeled, and halved if large
* 2 cloves garlic, crushed
* 80g Benecol® Cream
* Cheese Style Spread
* 2 tbsp chopped parsley
* 40g Parma ham, cut in strips
-Bring a large pan of water to the boil, add the pasta and cook according to
packet instructions. Add the peas for the final three minutes.
- Drain, reserving 3 tbsp of the cooking water.£Meanwhile, melt the Benecol
Olive Spread in a frying pan, add the shallots and cook, stirring, for about
10 minutes until really soft and beginning to caramelise.
- Add the garlic and cook for a minute.
- Stir in the Benecol Cream Cheese Style Spread with the reserved cooking
water and mix until smooth.
- Add the pasta and peas, parsley and ham and mix through until hot. Season
with black pepper and serve.

*Consuming 1.5 to 2.4g of plant stanols a day has been proven to lower
cholesterol as part of a healthy diet and lifestyle. Heart disease has
multiple risk factors; you may need to alter more than one to cut overall
risk. Do not consume more than 3g of plant stanols a day. Consuming more has
no additional benefit and is not recommended.
