# How to cook the perfect roast dinner
## A succulent joint of beef from the Sainsbury's Taste the Difference range
will bring guests hurrying to your table, says Lizzie Johnson.

There's a definite nip in the air and, in the countryside, a faint whiff of
woodsmoke - the nights are drawing in and autumn is on its way. It's time to
return to relaxed Sunday lunches, followed by a walk in the park and maybe
even an indulgent afternoon snooze.
To conjure up the ultimate roast, you want to be sure you're buying and
cooking the best meat available. Sainsbury's Taste the Difference 21-day slow
matured beef is matured on the bone to develop incredible tenderness and
flavour. The beef is carefully selected, with attention to high welfare
standards and - even better - is 100 per cent British, so you know you are
buying the best.
Follow our tips and we guarantee you'll produce the perfect Sunday lunch. Then
all you need to do is relax and enjoy the flavours as well as the compliments.
### The perfect roast beef
Serves 6
* 3lb 5oz/1.5kg Sainsbury's 21-day slow matured joint of beef
* 1 tbsp olive oil
* Sea salt and freshly ground black pepper
* 1/3 pint/200ml Sainsbury's beef stock
* Splash red wine
* 1 tsp redcurrant jelly
Preheat oven to 200C/400F/ gas mark 6.
Remove all packaging from the beef and calculate the cooking time (see pack).
Lightly brush olive oil over the beef and season with the salt and black
pepper.
Place beef on the middle shelf of the oven and cook for the calculated time,
basting occasionally with the juices.
Remove meat from the pan, place it on a carving dish, cover with foil and
leave to rest in an warm place for 10 minutes. This is important as it allows
the meat to relax.
Place the roasting tin on the hob and add the stock, red wine and redcurrant
jelly, stirring well to remove all the caramelised bits stuck to the base.
Bring to the boil and allow to reduce slightly.
### Perfect timing

Sainsbury's recommends oven cooking joints of its 21-day slow matured beef
from chilled. Simply follow these guidelines or see pack for details:
* Rare, 20 minutes per lb/500g plus 20 minutes extra.
* Medium, 25 minutes per lb/ 500g plus 20 minutes extra.
* Well done, 30 minutes per lb/ 500g plus 20 minutes extra.
All cooking appliances vary, so the above times are only a guide. Always check
the product is piping hot.
To test when cooked, gently squeeze the roast beef with tongs. Rare will feel
very soft, medium is springy while well done is firm.
