# Five minute food that's both fast and delicious
## Too busy to cook supper? Not if you follow these simple, seasonal recipes

It happens all too often. I meant to start supper an hour ago, but the
telephone rang, or the traffic was dreadful or I was just late, late, late.
Now the children are hungry, my husband is having a sense of humour failure
caused by low blood sugar levels, and we are all too knackered to spend more
than five minutes getting food on the table.
Ready meals are out of the question. They take too much time to reheat. And
let's face it, those flimsy white plastic trays of slop feel like prison food,
not nourishment or pleasure. There has to be a better alternative.
Enter _Five Minute Food_, the new Telegraph TV webcast, available to watch at
[www.telegraph.co.uk/fiveminute][7]. Like its big sister, [_Ten Minutes to
Table_][7], I'm cooking in real time - no cheating, no backstage help. But
with just half the time, I'm feeling the pressure.
Of course, it won't be fancy dishes. But a Mexican-style toasted cheese
sandwich, a spicy soup, even a simple duck dish, can be made from fresh
ingredients and whizzed on to the table faster than the average takeaway can
knock out an oil-slicked tikka masala.

Sure it's fast, but it's real food, with fresh ingredients. Never mind the
speed, feel the quality.

**Noodles with teriyaki sauce and smoked duck: **Amazingly popular and very
easy. You could use leftover roast duck instead of the smoked duck, or if you
have time, cook a fresh duck breast.

**Soft polenta with parmesan and prosciutto: **Comfort in a bowl for a chilly
day. Instead of prosciutto, eat polenta with grilled salmon, or on its own.

**Quesadillas with avocado, salt and lime:** It's all too easy to eat too many
of these quesadillas, all crisp tortilla and gooey melted cheese, the
Mexicans' better answer to the toasted cheese sandwich. Avocado dressed with
nothing more than coarse salt and lime juice is a magic combination.

**Spicy tom yam soup: **This hot and sour broth is also delicious cold. If you
need carbs, microwave a pouch of ready-cooked rice to eat alongside it.
