# Five-Minute Food: Soft polenta, parmesan, proscuitto
|
|
|
|
## This is comfort in a bowl for a chilly day. Instead of the proscuitto, eat
|
|
the polenta with some grilled salmon, or just on its own.

**Serves 1-2**
|
|
|
|
* Half a teacupful of quick cook '1 minute' polenta
|
|
|
|
* Handful of green beans
|
|
|
|
* 1tbsp butter
|
|
|
|
* Lump of parmesan, big enough to grate 3tbsp from
|
|
|
|
* 4 slices of proscuitto
|
|
|
|
Boil the kettle. Pour a little boiling water in a small saucepan and bring
|
|
back to the boil. Top and tail the beans and drop in. Cover and leave to
|
|
simmer.
|
|
|
|
Put the polenta in the pan and add two teacupfuls of boiling water.
|
|
|
|
Crush in the garlic, add a fat pinch of salt and bring to simmering point,
|
|
stirring occasionally. When thick and creamy, grate in 3 tbsp parmesan and
|
|
half the butter, taste and check the seasoning.
|
|
|
|
Drain the beans and mix in the rest of the butter, a pinch of salt and a good
|
|
grinding of pepper.
|
|
|
|
Serve the polenta with the beans and the proscuitto tumbled beside it.
