# Tried and tested: the perfect hunter's lunch
|
|
|
|

The hunter's lunch is a long way from the highly accessorised picnic with
|
|
brimming hamper, rugs and Tupperware. It is a small, paper-wrapped package to
|
|
pop in a coat pocket that will survive a day's energetic action.
|
|
|
|
As teenagers we trudged with sore feet alongside my father on Scottish
|
|
holidays, "walking up" grouse, longing to rest and eat our ''piece'' - the
|
|
word used in the Highlands for a packed lunch.
|
|
|
|
When the rest of my family went foxhunting (I was always hopeless on a horse)
|
|
they would pack their coat pockets with small packets of food that would
|
|
survive the day intact. A favourite was a sticky firm gingerbread, made to the
|
|
Belvoir ginger cake recipe in Constance Spry's cookbook. After Christmas it
|
|
would be little foil-wrapped slices of plum pudding with brandy butter.
|
|
|
|
In Italy, grocers sell salami cacciatore, a hunter's air-dried sausage to tie
|
|
to a trouser loop - but a folding knife is essential to access this stylish
|
|
alfresco meal.
|
|
|
|
Recently I haven't had much luck with pocket knives. My old favourite, a
|
|
robust Spanish job with corkscrew and olive wood handle, was detained by
|
|
security at Heathrow when I forgot to take it out of my hand luggage. My next,
|
|
a small, slim, hand-forged beauty from Laguiole in France, with my name
|
|
engraved on the blade, was mislaid in the excitement of hand-lining for crabs
|
|
on the seafront at Poole.

Here is a worthy substitute; and some sturdy fare to sustain the hungriest
|
|
huntsman.
|
|
|

**Pocket picnic knives **
|
|
|
|

Almost every shop in Laguiole, a market town in the Aubrac region of France,
|
|
is a knife shop, but only a few sell capuchadou, traditional knives made to
|
|
the rules of the Association du Couteau de Laguiole. The Forge de Laguiole
|
|
([www.forge-de-laguiole.com][10]) is one. Every blade there is tempered to
|
|
54-56 Rockwell, the optimum strength for a long-lived knife.
|
|
|
|
**(Almost) indestructible cakes **
|
|
|
|

|
|
local hunt members, this is a rib-sticking, gorgeously energising cake made
|
|
with raisins, sultanas, butter, muscovado sugar, eggs, rum and almonds. Wrap
|
|
it tightly - or sandwich with rum butter for extra inner warmth.
|
|
|
|
* **Belvoir ginger cake** is not commercially made, but Stephen Hallam of
|
|
Dickinson & Morris is looking into producing it. You can make your own
|
|
following the recipe in The Constance Spry Cookery Book (Grub Street).
|
|
|
|
**Hunter's salamis **
|
|
|
|
* Some excellent salamis made with pork, wild boar, game and venison are
|
|
produced at Trealy Farm, Mitchel Troy, Monmouth (01600 740705,
|
|
[www.trealy.co.uk][13]). The minimum order is £50 - or contact them for
|
|
stockists.
|
|
|
|
The team there has mastered the Italian art of dry-curing sausages using
|
|
naturally reared, slow-grown meat from local farms. The wild boar salami is
|
|
delicious, but the snack-sized salami will fit into pockets.
