# Best British recipes: Bread and Butter Pudding
## Bread and Butter Pudding: The most popular pudding in my poll and no
wonder, since well made it is irresistible.

Serves 6
This version is soft, sweet and delicately orangey, and it's made with proper
British ingredients, rather than those Johnny-come-lately versions using
panettone, brioche or even croissant.
9oz/250g chunk of day-old, unsliced white bread
2oz/55g butter
1 tbsp chopped mixed candied peel (optional)
3 tbsp sultanas
10fl oz/280ml milk
A split vanilla pod or 2 tsp vanilla extract
10½fl oz/300ml single cream (or more milk)
3 eggs, beaten
3 tbsp sugar
grated zest of half an orange or 1 tbsp orange liqueur (such as Cointreau)
2 tbsp Demerara sugar
* Butter a shallow three-pint/1.5l baking dish.
* Cut the crusts off the bread and slice into half-inch/1cm pieces. Spread
them with most of the butter. Cut the slices into halves or quarters
(depending on their size) and lay in overlapping rows like roof tiles,
sprinkling the sultanas and candied peel between each layer.
* Put the milk in a pan with the vanilla pod (if using) and bring to just
below simmering point. Leave to infuse for 10 minutes, then remove the pod.
Rinse and dry the pod for using again.
* Mix the milk, cream, eggs, sugar and orange zest or liqueur. Pour over the
bread and butter and leave to stand for at least 10 minutes.
* Preheat the oven to 150C/300F/gas mark 2.
* Sprinkle the Demerara sugar over the pudding and dot with the remains of
the butter.
* Bake for 40 minutes, until golden and barely set (it should still wobble a
little as you take it out of the oven).
* Leave to stand for 10 minutes or so before serving with cream.
