# Mango with raspberries and sesame snaps
## Home-made sesame snaps make a crunchy contrast to the jewel-coloured
fruit. It is easy to make, especially if you add a little liquid glucose
(available from Tesco and Sainsbury's), which stops the caramel from
crystallising. Or, use one of those yellow packets of ready-made sesame snaps
instead.

**Serves 4 **
4oz/110g granulated sugar
1 tsp liquid glucose (optional)
2 tbsp sesame seeds

2 medium mangoes, peeled and diced
Small punnet of raspberries
* Line a baking sheet with non-stick parchment. Have a palette knife or
heatproof spatula handy.
* Spread the sugar out in a small frying pan, add the glucose if you're
using it, then heat over a medium heat until the sugar melts and turns caramel
coloured. (Resist the temptation to stir it, or it will crystallise. Instead,
give the pan a good shake from time to time.)
* Once the sugar has melted to caramel, tip in the sesame seeds and stir for
a second.
* Tip out onto the lined baking sheet and quickly spread it as thinly as
possible with the palette knife.
* Leave to set hard (which it will do within minutes).
* Tumble the mango and raspberries together. Then break up the sesame snap
and scatter over the top.
* Serve with lime wedges for squeezing, either straightaway (for the
crunchiest snaps) or an hour later if you prefer the praline to have melted
into the fruit a little.
